Banana Chip Muffins

These are one of my favorite muffins. Danny and the kids love them too. I've had too many of them today. I went to a Taste of Home Cooking School last night and I'm in the mood to cook (and eat).

Banana Chip Muffins

* 1 1/2 cups flour
* 1/2 cup sugar
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1 egg (slightly beaten)
* 1/2 cup milk
* 1/4 cup vegetable oil
* 1 cup chocolate chips
* 3/4 cup mashed ripe banana (about 2 bananas)

1. Preheat oven to 400 degrees.

2. Combine dry ingredients.

3. Add egg, milk, and oil and stir until blended. Then fold in chocolate chips and mashed banana.

4. Fill greased or paper-lined muffin tins about 2/3 full. Bake 15 minutes, or until a toothpick inserted in the center comes out clean.

Candy Bar Apple Salad

I made this yummy dessert today. We all liked it. Chloe and Owen had seconds. Owen said "It has chocolate in it, but the apples are the best part". Phoebe liked the cool whip/pudding part. She won't eat raw apples (she just chews and chews, and then spits them out). It's quick and easy, and so tasty!

1 1/2 cups cold milk
1 package (3.4 oz) instant vanilla pudding mix
1 carton (8 oz) frozen whipped topping, thawed
4 large apples, chopped (about 6 cups) not peeled (I used Red Delicious)
4 Snickers candy bars (2.07 oz each - full size bars), cut into 1/2 inch pieces

In large bowl, whisk milk and pudding mix for 2 min. Let stand for 2 min. or until soft-set. Fold in whipped topping. Fold in apples and candy bars. Refrigerate until serving. 12 servings of 3/4 cup each.
